Chicken Caesar Kale Wraps


I haven't put many sandwiches on the blog yet, so I figured I would start with my favorite. Chicken caesar wraps are delicious, quick and healthy. Unlike traditional caesar salad, which is packed with calories and fat, this version is lighter and filled with vitamins. The key is using a low calorie or light caesar dressing. I prefer Newman's Own, but Annie's makes a great version as well. This is a quick and easy dinner that can be put together in minutes. I have substituted kale for traditional romaine for a boost of Vitamin A, iron, calcium, B Vitamins and antioxidants. I also added some grated parmesan for flavor and ground flaxseed for the omega 3's. You can cook the chicken however you like, I prefer to season it with some black pepper, cayenne and garlic powder and grill it on my George Foreman.

Radish, Cucumber and Apple Salad


Radishes are members of the cruciferous vegetable family and are packed with vitamin C, calcium, potassium and folic acid. Seeing the cute bunches in the store inspired me to create a crunchy spring salad that would highlight these adorable veggies. I decided to add tart apples and crunchy cucumbers and create a simple honey mustard vinaigrette. This was a surprisingly filling salad, and next time I think I will add some grilled shrimp.

Best Bolognese Sauce Ever


Craig came home today and begged me to make a bolognese sauce. I decided to create a version that highlighted a few different meats and some fresh herbs. This is a simple and flavorful sauce that will make your kitchen smell divine. Bacon, sausage and ground beef combine for a complex, meaty, and hearty sauce. Serve over the whole wheat pasta of your choice, I used farfalle, but anything would work well. Top with some fresh grated parmesan and black pepper.
