Green and Wax Bean Salad


I didn't feel like cooking a big meal last night, so I threw together this delicious and filling salad using some fresh green and wax beans. The blanched beans are tossed with tomatoes, capers, chickpeas and a light lemon vinaigrette. A complete meal filled with protein and fiber, this is a great way to get some veggies and quickly throw together a light dinner.

Bacon, Ricotta and Pistachio Pizza



Homemade pizza is always a special treat. This is a very unique combination of ingredients, but it makes for a delicious gourmet pizza. Crisp bacon and salty pistachios compliment the whole wheat crust and creamy ricotta. The secret to this pizza is to rub the crust with garlic and olive oil and bake it briefly before adding all the toppings. This adds a lot of flavor and character to the pizza. This is a filling meal, but could also be an impressive appetizer or dish to bring to a potluck.

Sweet Corn Fritters


Fresh corn is one of my favorite summer treats. I had been curious about making corn fritters for a while, but was put off by the deep frying. I decided to create this version, which highlights the sweetness and crunch of the corn while utilizing the amazing powers of my cast iron skillet. Seared and browned in the skillet and then baked in the over, these fritters are flavorful and filling, without being greasy. Fresh avocado and cilantro compliment the fritters and add some coolness to the dish.
