Mini Turkey Meatloaves


I don't know about you but I ate a TON this past weekend. My holiday binge was epic. So many delicious dishes and lots of desserts, nuts, chocolates and glasses of wine. The best way to recover from this sort of gluttony is to spend some time making some filling and healthy things to keep in the fridge for when you get hungry. Meatloaf is a delicious comfort food, and turkey  meatloaf is a fabulous way to keep it light. However, sometimes turkey meatloaf can get really dry and coarse. This recipe combines lots of healthy veggies with lean turkey breast for a protein packed and comforting dish.

You can obviously bake this in a loaf pan, but its faster and simpler to just use muffin tins. It cuts down on baking time and makes fabulous single servings. I decided to use my square muffin tin, but feel free to use what you've got. Mini muffin meatloaves would be a great party appetizer!

Drunken Noodles (Pad Kee Mao)


A takeout favorite, this is a Thai street dish filled with flavor and heat. Called drunken noodles because the dish was designed for late night partiers who needed a pick me up, the basil, chilies and lime create a unique flavor that is highly addictive. I made some changes to this dish, substituting brown rice vermicelli for broad rice noodles and adding lots of veggies. Lean ground turkey is a great choice for this dish, but shrimp or tofu would be just as tasty. The sauce is light and far lower in sodium than a traditional recipe, a little will go a long way. If you prefer a milder version, cut out the chilies. Best of all it's a quick 30 minute dinner that can be thrown together on a busy weeknight!

Turkey Fried Rice


Fried rice is a delicious, but usually calorie and sodium heavy dish. This version is packed with filling protein and vitamin-rich veggies. Ground white meat turkey, brown rice, and veggies create a tasty and simple meal that also makes a great leftover lunch. I added some fresh ginger for its antioxidant and anti-inflammatory properties and some chili oil for spice. This is Craig's favorite dinner, so I always try to make extra for leftovers.

Vegetarians can skip the turkey and substitute your favorite meat substitute or some slivered almonds.

Super Lean Chili



Spicy, filling chili is a great fall comfort food and an essential part of any football menu. It is so great to cook up a big pot of this and have leftovers for days. I like to serve it with some shredded jack cheese and blue corn tortilla chips. My version is low in calories and is loaded with filling protein and fiber. This recipe makes 8 servings which can be frozen for a quick dinner or a tasty lunch. It also includes three different types of beans, which add a ton of calcium, potassium, Vitamin B6, magnesium, folate, alpha-linolenic acid and antioxidants.
