Kale Slaw with Thai Peanut Dressing


This is a quick and healthy slaw that incorporates my favorite cruciferous veggie: kale. Combined with cabbage, carrots and a thick peanut dressing, this is a fresh and filling summer salad. Try it for a lighter side at your next cookout or top with some grilled chicken or shrimp for a light dinner.

Bok Choy Salad with Peanut Dressing


Bok Choy is a nutritional powerhouse. Filled with vitamin C, folic acid, potassium and antioxidants it's a great addition to many dishes. Usually, bok choy is cooked, but I thought the crunchy stalks and spicy leaves would be delicious raw. Mixed in this simple salad, the flavor of the bok choy is enhanced by the peanut dressing. This salad is quick, easy, and unique.

Baked Shrimp Wontons with Peanut Sauce

This tasty dish feels like a restaurant treat, but is quick and easy to make at home. Baking the wontons instead of frying makes them crispy, crunchy, and healthy. Craig actually invented the filling for these, which is simply shrimp, carrots and cabbage. This nutritious combo packs a ton of protein, vitamins and minerals and avoids added fat and salt.
