Chicken Satay

Chicken satay is one of my favorite take out foods. The blend of spices and creamy dipping sauce makes for a tasty appetizer or main course. Because it's served on sticks, it is also an easy finger food for any party or get together you throw. There are many different versions of this dish, but this is a Thai inspired one. It is marinated in a lemongrass ginger marinade and then grilled (you can also use a George Forman Grill if you like) and served with peanut sauce. It takes some time to put together, but overall it is quite simple and soooo delicious!

1lb boneless, skinless chicken breast
wooden skewers

Marinade Ingredients:
1/2 cup low sodium soy sauce
2 tbsp fish sauce
1 tbsp garlic, minced (2 cloves)
2 tbsp ginger, minced
1 tsp sriracha sauce
2 tbsp fresh (or frozen) lemongrass, chopped
1 tbsp cumin
1 tsp tumeric
1 tsp corriander
juice of 1/2 lime

Peanut Sauce Ingredients:
1/4 cup natural peanut butter
1/4 low sodium soy sauce
juice of 1 lime
2 tbsp garlic, minced (3-4 cloves)
2 tbsp fresh ginger, minced

Step by Step Instructions:
1. Soak wooden skewers (this is so they won't burn)

2. Slice chicken breasts into 2-3" wide and 4-6" long strips (to fit on skewers)

3. Combine marinade ingredients in food process and pulse until combined

4. Marinate chicken pieces in marinade for 1-3 hours

5. Put chicken strips onto wooden skewers

6. Grill chicken on both sides for 2-3 minutes,  until cooked through

7. While chicken is cooking, combine peanut sauce ingredients in food processor and mix until a thick paste forms

8. Serve hot chicken skewers with peanut sauce for dipping
