Greek Orzo Salad


Whole wheat orzo salad is a great way to enjoy a light pasta and veggie dish that is perfect for a cookout or party. Served cold, this dish combines delicious Greek flavors with fresh, seasonal produce. Filled with fiber, whole wheat orzo is a filling and healthy way to enjoy pasta salad. This recipe makes 4 servings and actually tastes best if you leave it in the fridge for a bit before eating. Serve topped with feta or grilled shrimp or chicken.

Ingredients:
8oz whole wheat orzo
1/2 english cucumber, sliced into 1/2" chunks
5-6 artichoke hearts, rinsed and sliced (canned, frozen or fresh)
4 tbsp capers
1 cup plum tomatoes, sliced in half
2 scallions, rinsed and sliced thinly
2 tbsp fresh oregano, washed and chopped
2 garlic cloves, minced
1/2 lemon, juiced
2 tbsp extra virgin olive oil
3 tbsp white wine vinegar
1 tsp cumin
optional: feta cheese


Step by Step Instructions:


1. Cook orzo according to package instructions, rise with cold water and set aside

2. Mix cucumbers, artichoke hearts, capers, scallions, tomatoes, and oregano in a bowl

3. In a small bowl, whisk together oil, vinegar, lemon, garlic and cumin

4. Toss veggies with orzo and dressing thoroughly

5. Serve with feta cheese
