Mini Turkey Meatloaves


I don't know about you but I ate a TON this past weekend. My holiday binge was epic. So many delicious dishes and lots of desserts, nuts, chocolates and glasses of wine. The best way to recover from this sort of gluttony is to spend some time making some filling and healthy things to keep in the fridge for when you get hungry. Meatloaf is a delicious comfort food, and turkey  meatloaf is a fabulous way to keep it light. However, sometimes turkey meatloaf can get really dry and coarse. This recipe combines lots of healthy veggies with lean turkey breast for a protein packed and comforting dish.

You can obviously bake this in a loaf pan, but its faster and simpler to just use muffin tins. It cuts down on baking time and makes fabulous single servings. I decided to use my square muffin tin, but feel free to use what you've got. Mini muffin meatloaves would be a great party appetizer!

Ingredients:
1 medium onion, minced or shredded in a food processor
1 large carrot, minced or shredded in a food processor
1/2 cup of spinach, minced or shredded in a food processor
2 cloves of garlic, minced
1lb white meat ground turkey
1 egg, lightly beaten
1 cup whole wheat breadcrumbs
1 tbsp tomato paste
2 tbsp hot sauce or sriracha
1 tsp paprika
1 tsp chili powder
1 tsp black pepper
2 tbsp fresh parsley, chopped
olive oil cooking spray



Step by Step Instructions:


1. Preheat oven to 350

2. In a small bowl, whisk together egg, tomato paste, hot sauce and spices

3. In a large mixing bowl, combine all ingredients and knead together with your hands until combined, be careful not to overmix

4. Spray your muffin tins with olive oil cooking spray

5. Carefully scoop the meat mixture into the muffin tins, lightly packing it down

6. Fill all the tins

7. Bake for 10-12 minutes, until the tops start to brown

8. Remove and serve with ketchup

Delicious recipe, Dara! I know EXACTLY what you mean regarding over-eating this holiday season. It is so easy and tempting - and I certainly ate my fair share! This is a tasty alternative to the other heavier options out there! Happy New Year!

What a great idea with the muffin tin! I think it's way better than making a whole meatloaf, these are way cuter and easier to serve. The colors are also gorgeous and you're definitely right, this is the perfect dish after all those crazy rich foods we've been eating for the holidays :) Thanks for the great recipe!
