Apple Fennel Pork Chops

These pork chops are a quick and simple dinner that can be whiped up in less than 30 minutes. Lean pork is high in iron, vitamin B12 and zinc. Combined with tasty apples and crisp fennel, it is an impressive and lean dinner. Fresh sage compliments the dish and intensifies its flavors. As always, it is critical that you thoroughly cook pork. Google internal temperatures and use a meat thermometer if you want to be absolutely sure.

 Prep Time: 5 minutes
Cook Time: 20 minutes

Ingredients:
2 center cut boneless pork chops
1 medium head of fennel, sliced
2 medium apples, sliced
2 tbsp fresh sage, chopped
4 oz apple juice
1 tbsp extra virgin olive oil
salt
pepper

Step by Step Instructions:
1. Preheat oven to 350

2. Season chops with salt and pepper

3. In a skillet on medium-high heat, sear pork chops for 2 minutes on each side

4. As chops cook, slice fennel and apples

5. Remove chops from pan

6. Sautee apples and fennel in olive oil for 4 minutes, until slightly browned

7. Add apple juice and sage and cook an additional 2 minutes on medium

8. Add pork chops back to skillet, season with salt and pepper

9. Put skillet in oven and roast chops 5 minutes on each side, or until cooked through
